Recipe of the Week - Fitness Newspaper

These potato wedges have a lovely zesty taste and make a great snack or side dish! Perfect for anyone needing a grain-free carb-load (or for anyone who just wants a healthier but equally yummy alternative to deep fried chips)!

Ingredients

500g ?everyday? potatoes (washed and cut into wedges)

1-2 tbsp garlic-infused extra virgin olive oil

Juice of 1 lime

2 sprigs of fresh rosemary (or 1-2 tsp of dried rosmary)

?

Method

1.Preheat the oven to 200 degrees C.

2. Bring a pan of water to the boil. When the water is boiling, put the potato wedges in the pan and simmer for approximately 3 minutes.

3. Drain the water from the wedges and pat them dry.

4. Put the wedges on a baking tray and toss them in the oil and lime juice, making sure that each potato has a coating of the oil and juice. Then sprinkle with the rosemary and place in the oven for 20-25 minutes (or until the wedges turn golden and crispy).

?

Tip: shake the baking pan every 5-10 minutes to prevent the wedges sticking.
